Cheddar broccoli soup is the ‘perfect autumn meal’ to make in 30 minutes

Now that the nights are getting colder and darker, many people are looking for easy comfort food to make and help boost their mood this winter.

Cheddar broccoli soup is not only delicious and perfect for anyone craving something cheesy, but it is also incredibly simple to cook up in less than 30 minutes.

In a recent interview with the Express, food expert Phil Bianchi from The Gift of Oil explained that the key to making a “great soup recipe” is making sure it is packed with dairy, vegetables and hearty stock.

He said: “As long as you have those three key ingredients, no matter the variation, you’ll be guaranteed a good soup full of flavour.”

This cheddar broccoli soup recipe not only contains all of these ingredients but is the “perfect [autumn] meal” according to cook Amanda Francis, who has shared how to make this creamy yet cheesy soup in a video online.

How to make cheddar broccoli soup 

Ingredients: 

  • 400g of chopped broccoli
  • 175g of grated cheddar cheese
  • Four medium peeled and diced potatoes
  • Two grated carrots
  • One roughly chopped onion
  • Four gloves of chopped garlic
  • Four tablespoons of butter
  • One litre of either chicken or vegetable stock
  • 250ml of cream
  • 250ml of milk (optional)
  • Nutmeg for taste (optional)
  • Paprika for taste (optional)
  • Salt and pepper

Kitchen equipment:

  • Large pot with lid
  • Blender or hand-held blender

Instructions 

To begin, place your pot on the stove and heat up the tablespoons of butter. Once hot, add the onions and garlic then cook until soft and golden-coloured. Then add your potatoes and continue to stir and cook for a few more minutes.

Add in your stock and bring the soup to a soil. Add your broccoli and carrots, then reduce the soup to a shimmer.

Let the soup simmer for around 20 minutes or until both the potatoes and broccoli have softened.

Blend the mixture together, and then add in your cream and milk. Add in the seasoning and stir all the ingredients together.

Add in your cheese and continue to stir until fully incorporated, your creamy and cheesy broccoli soup is now ready to serve.
