Sainte Marthe Salad Recipe

"Named for the quarter in Paris where I first tasted this crisp, fresh salad in a little bohemian cafe. Cut the zucchini and the apples into equal-sized cubes."

  • 2 Granny Smith apples, diced
  • 1 medium zucchini, diced
  • 1/4 cup almond slivers
  • 1/2 lemon, juiced
  • 2 tablespoons olive oil, or more to taste
  • 2 sprigs fresh mint, chopped

    1. Combine apples, zucchini, almond slivers, mint, lemon juice, and olive oil in a bowl; toss to combine.
    2. Serve in clear glass bowls or cocktail glasses, which is the presentation used at the Parisian cafe where I first enjoyed this salad.
