World’s Best Meatloaf


  1. 2-1/2 lbs lean ground beef
  2. 1 lb mild Italian sausage
  3. 2 eggs
  4. 2 celery stalks
  5. 1 small onion
  6. 1/4 cup ketchup
  7. 1 tsp ground coriander
  8. 1/2 tsp rubbed sage
  9. 1/2 tsp pink Himalaya salt
  10. 1/2 tsp ground black pepper
  11. 2 tbsp molasses (topping)
  12. 3 tbsp ketchup (topping)


  1. 1st rough chop celery and onion and add to a small food processor. Pulse 5-6 times, then add to a large bowl.

  2. Add all the remaining ingredients to the large bowl. Using your hands, mix thoroughly. This may take 6-7 minutes. Squeezing the meat mixture through your fingers is crucial to creating the correct texture.

  3. Form meat mixture into a loaf. I usually roll the mixture back and forth to remove any obvious cracks or air pockets.

  4. Place the loaf on an oval rack, and lower the rack in to the oval roasting pan.

  5. Drizzle the remaining ketchup and molasses over the top.

  6. Place in a 450 degree oven. Bake uncovered for 15 minutes. Decrease the oven temperature to 350 degrees and continue to bake an additional 45 minutes.
