Weekend Breakfast Burritos

While the burritos bake, melting the yummy cheese, you’ll have time to brew coffee, pour juice–or read the paper and relax.

Ingredients

tablespoon margarine or butter

eggs, beaten
1/4
teaspoon pepper

cups diced Canadian bacon

(8-inch) flour tortillas

oz. (1 1/2 cups) shredded Cheddar cheese

Steps

  • 1Heat oven to 400°F. Melt margarine in large skillet over medium-high heat. Add eggs, pepper and bacon; cook and stir about 5 minutes or until eggs are firm but moist.
  • 2Spoon egg mixture evenly onto each tortilla. Top each with 1 tablespoon cheese. Roll up tortillas tightly. Place, seam side down, in ungreased 13×9-inch (3-quart) baking dish. Sprinkle remaining cheese over tortillas.
  • 3Bake at 400°F. for 10 to 15 minutes or until cheese is melted. If desired, serve with sour cream and salsa.
