Watermelon sherbet

I found many ways to make this and decided to just come up with my own way after looking at different recipes … this is what I came up with.
I would recommend using just half of a watermelon and not just 3 cups . I have 3 kids so I wanted to make a lot, and can add more honey, or substitute the honey for 1 cup of sugar. This is something you want to make ahead of time . It’s easy cheap and just a few ingredients and I have happy kids over the hot summer days.

Ingredients

  1. 3 cups Watermelon Cut into 1 inch cubes
  2. 1/2 cup water
  3. 3 tablespoons honey
  4. Squeeze lemon juice

Steps

  1. Freeze all watermelon cubes not touching each other. Freeze overnight

  2. Put frozen cubes of watermelon in a blender with all ingredients. Blend until well combined (I tried this in my food processor, save you the trouble don’t try it, I ended up digging out my blender.)

  3. Sever or place in a freezer container or loaf pan and freeze and sever later.

  4. Notes- you may need to add more water to help blend it, I had too a 1/2 cup wasn’t enough I did use a lot of watermelon though too… I used half of a small watermelon that was seedless.
