Stuffed pepper soup


  1. 1 lb ground meat
  2. 1 green bell pepper, diced
  3. 1 onion, diced
  4. 1 can diced tomatoes
  5. 1 can tomato sauce
  6. 1 can beef broth
  7. 1 clove minced garlic
  8. 1 cup rice
  9. Salt, pepper, Italian seasoning
  10. Optional: top with shredded cheese


  1. In a large pot cook ground meat and drain fat. Add onion and bell pepper, cook a few minutes. Add garlic, cook 30 seconds.

  2. Add tomatoes, tomato sauce, broth, and seasonings. Cover and simmer 30-45 minutes until bell peppers are tender.

  3. In a small pot cook rice. Add cooked rice to soup after soup has simmered, stir until well combined. Serve with cheese on top.
