- 1 lb ground meat
- 1 green bell pepper, diced
- 1 onion, diced
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 can beef broth
- 1 clove minced garlic
- 1 cup rice
- Salt, pepper, Italian seasoning
- Optional: top with shredded cheese
In a large pot cook ground meat and drain fat. Add onion and bell pepper, cook a few minutes. Add garlic, cook 30 seconds.
Add tomatoes, tomato sauce, broth, and seasonings. Cover and simmer 30-45 minutes until bell peppers are tender.
In a small pot cook rice. Add cooked rice to soup after soup has simmered, stir until well combined. Serve with cheese on top.
