Shredded Beef Shank with Rice and Veggies

This made a ‘boatload’ more than anticipated. Scale accordingly.


  1. Slow cooker beef shank as below
  2. Grilled tomato
  3. Slice grilled cabbage
  4. Grilled Anaheim chili
  5. Grilled sweet chili
  6. Grilled habanero, optional
  7. Handful corn
  8. Handful peas
  9. 1 baby bok choy
  10. Several green onions
  11. 3 cups Jasmine rice
  12. High heat oil to coat rice
  13. 1 cup the shank water reserved for the rice
  14. Housing sauce

  2. Toast your rice

  3. 1 cup shank water and 5 cups water to the rice. Bring to boil, cover, turn to low and check in 12 minutes. Fluff with a fork and let sit for 10 minutes.

  4. Shred the shank and chop everything else.

  5. Mix it all together.
