Seriously Fast Dinners for Your Post-Holiday Week

The week after a long weekend — or a summer holiday — is always a bit hectic. If you soaked up all the summer sunshine on Sunday (as you absolutely should have!) then you likely skipped meal planning, meal prepping, and possibly grocery shopping too. No worries — we’ve got you covered with 10 dinners that take 10 minutes to prepare! Sure, none of these recipes will cure your “the long weekend is over” blues, but they will get you fed in a hurry.

1. Mozzacado Sandwich

Admit it — even the most basic grilled cheese is going to take more than 10 minutes to prep. Enter: the mozzacado. This sandwich is just really good ingredients (fresh mozzarella, sliced tomatoes, mashed avocado) on a very good bread. You don’t even need to toast the bread, unless you want to.

2. 3-Ingredient Pesto Zoodle Bowl

A fried egg has almost never let me down as a very good last-minute dinner. This particular fried egg sits on a bed of pesto-coated spiralized zucchini, which only helps to make it even more satisfying.

3. High-Protein Cottage Cheese Omelet

If you find that a basic omelet is not filling enough, meet your new go-to. This omelet is extra hearty, thanks to a filling of cream cheese and spinach.

4. Tomato Chickpea Salad

Toast some chickpeas (from a can, of course) and chop some tomatoes, pour a glass of wine, and boom! Dinner is on the table faster than you can queue up a show on Netflix.

5. Trader Joe’s Garlic Naan Flatbreads

Take the basic formula of flatbread, jarred vegetables, and grated cheese, and you can have infinite combinations of delicious flatbread pizzas without actually having to go to Trader Joe’s.

This is my family’s go-to summer dinner. While it packs well for picnics or long car rides, it also feels like a welcome respite on a weeknight during a hot week after we’ve eaten too many hot dogs and potato chips. Don’t skimp on the garlic cream cheese!

7. Chicken Tacos with Broccoli Slaw

This five-ingredient dinner is made from grocery shortcuts, but it doesn’t taste like it. Give ground pork a quick sauté before topping it with piquant broccoli slaw and rolling it in a whole-wheat tortilla.

8. 10-Minute Chopped Thai Satay Salad

A super-satisfying summer dinner salad that requires absolutely zero cooking? This satay-inspired bowl is just that, and you need to make it ASAP.

9. 10-Minute Garlicky Tomato Spaghetti

While you boil whatever basic pasta is in the cupboard, you can make this lovely garlic sauce to dress it up. While it might be just one step above buttered noodles, it is a delicious one.

10. 10-Minute Black Bean Tacos

Black beans and salsa wrapped in a tortilla is about as basic as you can get for dinner, but these tacos won’t heat up the kitchen and will be ready in no time flat.
