Quick and Easy Enchilada Sauce

I like making my own so I know exactly what goes in it.

Ingredients

  1. 1/4 cup butter or cooking oil of your choice
  2. 1/4 cup Flour
  3. 1/2 teaspoon black pepper
  4. 1/2 teaspoon dried oregano
  5. 1 teaspoon garlic powder
  6. 1 teaspoon onion powder
  7. 2 teaspoon ground cumin
  8. 1 tablespoon chili powder
  9. 1 tablespoon tomato paste
  10. 2 cups beef broth
  11. 1 can RoTel or diced chilis (optional)

Steps

  1. In saucepan, melt butter and add flour. Stir to combine well.

  2. Add spices to rue mixture and stir.

  3. Cook for about a minute or two to get rid of raw flour taste.

  4. Add beef broth and RoTel. whisk until smooth.

  5. Cook until thickened.

  6. I added a touch more broth because I like mine rather thin, adjust to your preference.

  7. I don’t add salt, but if using in yours, use unsalted butter and low sodium broth and it wont be so salty.
