Incredibly easy and fast prep dish that will provide leftovers. Great with garlic or artisan bread.
- 3/4 cup Basil Pesto
- 1 pkg Fettuccini Noodles
- 1 tbs Olive Oil
- 3 cloves Garlic
- 2 cups sliced roasted Red Peppers
- 1/2 cup sliced Black Olives
Prepare pesto if necessary and place in a large bowl.
Cook fettuccine noodles according to package instructions.
While the noodles are cooking, heat oil in a large skillet then add the garlic. Cook until soft and fragrant.
Add peppers and olives to the skillet and cook until hot.
When the pasta is finished, reserve 1/3 cup of the pasta water and drain the rest.
Whisk the pasta water with the pesto then combine the noodles and skillet mix to the bowl and toss to mix.
