Peanut soba noodles


  1. Peanut sauce
  2. 3/4 cup creamy peanut butter
  3. 1/4 cup rice vinegar
  4. 1/3 cup sesame oil
  5. 1/4 cup soy sauce
  6. 1 clove garlic
  7. 1 TBS ground ginger
  8. Dash hot sauce
  9. Noodle salad
  10. 1 package Japanese Soba noodles
  11. 1 small can water chestnuts, coarsely chopped
  12. 3 green onions, chopped
  13. 1/2 cup peanuts, chopped
  14. 2 heads broccoli
  15. Sesame oil


  1. Place all sauce Ingredients in a small food processor and blend until smooth. Taste and add sesame oil or rice vinegar if it needs to be smoother.

  2. Chop broccoli and toss in sesame oil and salt. Roast for 20 min at 400 and let cool

  3. Prepare soba noodles as package instructs and rinse under cold water

  4. Combine noodles, sauce, cooled broccoli and remaining ingredients in a large bowl and toss with tongs. Chill for 20 min or more before serving
