Pea soup

Ingredients

  1. 3 cups chicken stock
  2. 2 cups cooked or canned peas
  3. 1 cup cold water
  4. 1/2 onion
  5. Sprig parsley
  6. 1 cup 1/2 and 1/2
  7. 1/2 teaspoon salt
  8. 1/8 teaspoon pepper
  9. 2 tablespoons butter
  10. Celery salt

Steps

  1. Put aside one third of peas

  2. Add remainder to water stock and seasoning and let simmer 30 minutes

  3. Press through a sieve

  4. Add butter

  5. Let boil few minutes then add 1/2 and 1/2 and remaining peas which have been heated double boiler

  6. Serve very hot with little whipped cream and paprika
