Orzo with Spring Peas


  1. 1 box Orzo pasta
  2. 1/2 chopped onion
  3. 4 tbsp butter
  4. 32 oz chicken stock
  5. Juice of one lemon
  6. 2 cups peas
  7. 1 cup grated parmesan cheese


  1. Melt butter in large skillet

  2. Add dry orzo and lightly brown

  3. Add chopped onion to orzo and continue cooking

  4. Slowly add stock 1/2 cup at a time and keep stirring. Don’t add more stock until the last amount is absorbed.

  5. With the last addition of stock add the peas and stir to combine.

  6. When the peas are warm, add cheese and stir.

  7. Add lemon juice and stir.

  8. Serve warm or cold!

  9. Note: if orzo is not soft, you can add more stock or water.
