Low-Carb Ground Turkey Lettuce Wraps

INGREDIENTS

  • 2lbsground turkey
  • 2 eight ounce cans diced water chestnuts
  • 1red pepper, diced
  • 1yellow pepper, diced
  • 14 cup diced green onion
  • 2headsbutter lettuce
  • 1 12 tablespoonsagave nectar
  • 1cupwater
  • 14 cupsoy sauce
  • 14 cupwhite wine vinegar
  • 14 cupketchup
  • 2tablespoonslemon juice
  • 2tablespoonsspicy brown mustard
  • 1tablespoonred chili paste
  • 2garlic cloves, diced
  • 2tablespoonswater
  • 4teaspoonscornstarch

    DIRECTIONS

  • 1. To make sauce – whisk together agave nectar, water, soy sauce, vinegar, ketchup, lemon juice, mustard, garlic and set aside.
  • 2. Brown turkey in skillet and drain.
  • 3. Return turkey to skillet with mater chestnuts, and diced peppers. Cook until peppers are tender.
  • 4. Add sauce to skillet with turkey, water chestnuts and peppers.
  • 5. Mix 4 tsp cornstarch with 2 T water.
  • 6. Add cornstarch slurry to skillet.
  • 7. Cook until sauce thickens.
  • 8. Serve in butter lettuce leaves.
