Jalapeño Poppers

A perfect starter to acompany any BBQ or get together.
Jalapeños are fairly mild chillies with an average SHU of +- 5,000.


  1. 15-20 Jalapeño peppers (the bigger the better)
  2. 4 rashers smoked back bacon
  3. 1 tsp medium olive oil
  4. 2 cups mature cheddar cheese
  5. 1 cup plain flour
  6. 1 tsp baking powder
  7. 1/2 tsp salt
  8. 1/2 cup milk
  9. 1/2 cup water


  1. Carefully slice the peppers lengthways along one edge & remove the seeds & placenta.

  2. Chop the bacon into 5mm squares & fry in olive oil.

  3. In a bowl, mash the cheese, bacon, seeds & placenta together until well mixed & has formed a paste.

  4. Mix flour, baking powder and salt together.

  5. Add milk and water slowly, then beat until batter is smooth.

  6. Dip the stuffed peppers into batter, allow excess to drip off.

  7. Deep fry until golden brown.
