Homemade Chorizo

Started making this when I wasn’t sure what was in my store bought chorizo, turns out this is much better anyway. I usually buy a pork shoulder and grind it myself but works well with pre ground pork too


  1. 5 lbs ground pork
  2. 4 tsp kosher salt
  3. 3 tsp freshly ground black pepper
  4. 3 tablespoons ancho Chile powder
  5. 1 head finely minced garlic
  6. 3 tablespoons dried oregano
  7. 3 tablespoons cumin seed ground
  8. 3 tsp coriander ground
  9. 6 tablespoons distilled vinegar


  1. Mix all ingredients in a large mixing bowl cover and refrigerate overnight

  2. Separate into one pound portions and wrap to freeze for use as needed
