Started making this when I wasn’t sure what was in my store bought chorizo, turns out this is much better anyway. I usually buy a pork shoulder and grind it myself but works well with pre ground pork too
Ingredients
- 5 lbs ground pork
- 4 tsp kosher salt
- 3 tsp freshly ground black pepper
- 3 tablespoons ancho Chile powder
- 1 head finely minced garlic
- 3 tablespoons dried oregano
- 3 tablespoons cumin seed ground
- 3 tsp coriander ground
- 6 tablespoons distilled vinegar
Steps
Mix all ingredients in a large mixing bowl cover and refrigerate overnight
Separate into one pound portions and wrap to freeze for use as needed
