I’ve been delving into recipes from India and ghee is everywhere!This is a take from many internet recipes and my own tastes. Adjust to suit your needs.
Ghee is butter that has the water cooked out and then the oil is separated from the milk fat.
- 4 oz butter
- 1/2 tsp black mustard seeds
- 1/2 tsp cumin
Melt the butter with the spices over medium heat and watch it. As the water boils out it will get foamy.
After the bubbles stop it will start to take on a nutty smell and you’ll see the milkfat in the bottom.
Either carefully pour off the ghee, clear part, or filter it through a coffee filter, paper towel, etc.
