Ingredients
- 3 med onions, chopped fine
- 1 bell pepper, chopped fine
- 2 sticks butter
- 2 pounds crawfish tails
- 1 stalk celery, chopped fine
- 1 Tbs oil
- 1 small can tomato paste
- 1/2 cup onion tops
- 1/2 cup parsley
- 4 cups cooked rice
Steps
Cook onions, bell pepper, celery, and garlic in butter and oil until soft and wilted. Add one small can tomato paste, 1/2 cup onion tops, and 1/2 cup parsley.
Cook about 30 minutes. Add crawfish tails and cook 30 minutes longer. Serve over rice.
