Crawfish etouffee

Ingredients

  1. 3 med onions, chopped fine
  2. 1 bell pepper, chopped fine
  3. 2 sticks butter
  4. 2 pounds crawfish tails
  5. 1 stalk celery, chopped fine
  6. 1 Tbs oil
  7. 1 small can tomato paste
  8. 1/2 cup onion tops
  9. 1/2 cup parsley
  10. 4 cups cooked rice

Steps

  1. Cook onions, bell pepper, celery, and garlic in butter and oil until soft and wilted. Add one small can tomato paste, 1/2 cup onion tops, and 1/2 cup parsley.

  2. Cook about 30 minutes. Add crawfish tails and cook 30 minutes longer. Serve over rice.
