Coconut egg custard

Dip to toasted bread or banana fritter! I would love to add some pandan paste to enhance the flavour and colour, though.


  1. 2 eggs
  2. 1.5 tbsp tapioca flour
  3. 1 cup coconut milk
  4. 1/2 cup water
  5. 1/4 cup sugar


  1. Mix all ingredients to combine well

  2. Pour to saucepan, bring to simmer, turn off heat, whisk it throughly

  3. If its lumpy, blitz it up and it will become smooth and set aside to cool down and set.
