Chicken in Sun-Dried Tomato Cream Sauce

  • 14 teaspoonpepper
  • 12 cup sliced sun-dried tomato packed in oil
  • 12 cup finally chopped shallot
  • 1cupdry white wine
  • 1cupheavy cream
  • 2tablespoons chopped fresh parsley

    DIRECTIONS

  • Sprinkle chicken with salt and pepper. Add 1 tablespoon oil from tomatoes to a large skillet and heat over medium heat. Add the chicken and cook, turning once, until browned. Transfer to a plate.
  • Add sun-dried tomatoes and shallots to the pan. Cook, stirring, for one minute. Increase heat to high and add wine. Cook scraping up any browned bits, until the liquid has mostly evaporated.
  • reduce heat to medium and stir in cream. Simmer for two minutes.
  • return chicken to pan and turn to coat with the sauce. Cook until chicken is done. Sprinkle with parsley and serve over pasta.
