4boneless skinless chicken breasts
1 -2tablespoon fresh minced garlic
2cups chopped ripe tomatoes, any variety
1⁄4 cup finely chopped mild onion
5 -8basil leaves, chopped
1tablespoon minced garlic
1⁄4 teaspoonground black pepper
2 -3tablespoonsolive oil
4tablespoons grated parmesan cheese
stir together chopped tomatoes, onion, basil, chopped garlic, salt & pepper, and 2-3 tablespoons of extra virgion olive oil.Set aside until chicken is done.
Add olive oil to pan and preheat until oil is shimmering.
Add chicken to pan, sprinkle with salt & pepper and dried basil.Cook until browned. – about 6 minuteShorter if yousing thin sliced breast. Turn chicken over to brown other side.Cook 2-3 minuteAdd garlic to pan and cook over medium heat for several min more until chicken is cooked through.
Place chicken on serving platter and top with Bruschetta mixture.Add a sprinkle of freshly grated paremesan.
