Breakfast lasagna

Breakfast for dinner with leftover potatoes


  1. Bacon
  2. Left over mashed potatoes
  3. Sprinkle double cheddar cheese (2 light layers)
  4. Baby spinach (2 layers between potatoes & fried veggies)
  5. Mixture of crimini mushrooms sliced
  6. Red onion sliced
  7. Cherry tomatoes quartered
  8. 5 eggs scrambled
  9. Salt & pepper
  10. Homemade bread pan fried to crisp


  1. Cook bacon until crispy

  2. Pan fry left over potatoes in bacon grease

  3. Chop up mushrooms, red onion & cherry tomatoes and saute slightly

  4. Layer potatoes, cheese x2, spinach x2, veggie mixture, bacon then pour eggs on top with more cheese

  5. Cook at 400′ for 40 mins or until eggs are fluffy & set
