My wife wanted pancakes so I looked up a recipe online and altered it by substituting 1/4 cup of milk with coffee creamer and adding Goya Flaked unsweetened coconut. Try it. It’s easy and incredibly delicious.
- 1 1/2 cups flour
- 3 1/2 tsp baking powder
- 1 tbsp sugar
- 1 tsp salt
- 1 egg
- 3 tbsp melted butter
- 1 cup milk
- 1/4 cup unsweetened coconut
- 1/4 cup Butter Cookie Coffee Creamer
In a mixing bowl add dry ingredients together, then in a separate bowl add wet ingredients and stir together.
Pour wet ingredients into dry ingredients, mix together.
Heat a frying pan over medium heat. Add a small amount of oil and move the pan to get the entire bottom wet.
Spoon out batter into frying pan. When bubbles appear, flip pancakes and cook the other side.
