Barramundi in Banana leaf

South East Asian inspired whole fish recipe to surprise your special one


  1. 1 whole baby barramundi
  2. 3 leaves Banana leaf
  3. 1/2 Shallots
  4. 1/2 Red onions
  5. 3 cloves Garlic
  6. 2 inches Ginger
  7. 100 gr Galangal
  8. 2 sticks Lemongrass
  9. leaves Kaffir lime
  10. 20 gr Dried hot chilli
  11. 5 gr Szechuan peppercorn
  12. 10 gr Candlenuts
  13. 1 lime
  14. Salt
  15. 1 table spoon Sugar
  16. 1 table spoon Chicken powder


  1. Prepare all ingredients exclude barramundi and banana leaves, chop and blend together with little bit oil till smooth

  2. Clean the barramundi and score the fish for marinating then squeeze a lime

  3. Saute the spices paste with oil, add salt and sugar and chicken powder, adjust to taste, set aside when its turn brown

  4. Preheat oven 240celcius, while place barramundi onto banana leaf, spread the paste all over the fish and wrapped it up with baking paper and seal it with skewer

  5. Set barramundi to a baking tray, lower the temperature to 200 celcius, lets bake the fish for 15 minutes

  6. When its cooked, there is no pink flesh left inside the fish. Ready to eat
