Baked green beans and Mexican sweet potatoes

Wanting to cook one of my favorite recipes without frying like I use to.


  1. 2 Lb fresh green beans
  2. 1 LG. Mexican sweet potatoe(diced into small cubes
  3. 2 Tbsp the mother ? cider vinager
  4. 1/4 cp water
  5. 3 Tbsp sofrito
  6. 3 Tbsp olive oil
  7. 1/4 Tsp salt


  1. Prepare green beans and wash. Do not break beans. Leave whole

  2. Peel wash and dice potatoe

  3. Peel, smash and chop 3 cloves fresh garlic

  4. In long glass baking pan. Add garlic, salt, sofrito, vinager and water mix well

  5. Drizzle olive oil over green beans and Mexican potatoes. With gloves rub beans and potatoes until everything is covered with olive oil and pour into glass pan.

  6. Once more now coat break and potatoes very well in the marinade and cover pan with aluminium foil and bake on 355f for about 70 min turn and recover once half way through cook time. At 60 min remove foil and bake another 10 min. Then put on broil and brown top to golden.
