A Rummy Red, White, and Blue Grown-Up Slushie

Save the bomb pops for the kids and make this boozy, patriotic slushie recipe for the adults. This frozen, yet pleasantly sweet, cocktail doesn’t use any added sugar. The blue is natural thanks to blue spirulina. Not only does it make the most beautiful blue color, but it also delivers vitamins and minerals and doesn’t take away from the pineapple flavor of the layer. Pro tip: Make the layers in advance and then assemble the drinks right before serving for the most colorful delivery.

Ingredients

  • 1 cup canned light coconut milk, well shaken and stirred
  • 1 cup (8 oz.) white rum, divided
  • 6 cups ice, divided
  • 1 cup quartered fresh strawberries
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 1 cup chopped fresh pineapple
  • 2 teaspoons blue spirulina powder (such as Blue Majik)

How to Make It

Step 1

For the white layer, process coconut milk, 2 1/2 ounces of the rum, and 2 cups of the ice in a food processor until slushy consistency, about 20 seconds. Pour into a freezable container; freeze until ready to use.

Step 2

For the red layer, process strawberries, lemon juice, 2 1/2 ounces of the rum, and 2 cups of the ice until slushy consistency, about 20 seconds. Pour into a freezable container; freeze until ready to use.

Step 3

For the blue layer, process pineapple, spirulina, remaining 2 1/2 ounces rum, and 2 cups ice until slushy consistency, about 20 seconds. Pour into a freezable container; freeze until ready to use.

Step 4

When ready to serve, loosen up each slushy mixture with a fork. Spoon about 1/2 cup of each mixture into a tall glass, making 3 distinct layers. Serve immediately with a straw.
