  • 1 cupquick oats
  • 1 egg
  • 13 cupbutter
  • 1 cupflour
  • 14 cupcoconut sugar crystals or 14 cuphoney
  • 2 teaspoonsbaking powder
  • 2 teaspoonsground cinnamon
  • 1 teaspoonground nutmeg
  • 12 teaspoonvanilla extract
  • 1 apple
  • Directions

  • Mix together Cream and oats. Set this bowl aside.
  • Preheat oven to 375 and prep your muffin tin.
  • mix egg and butter together (gently).
  • In a mixing bowl, sift together the flour, coconut sugar, baking powder, cinnamon and nutmeg.
  • add the egg and butter mixture to the mixing bowl and gently stir.
  • cut apple into chunks.
  • Put apple chunks in mixing bowl.
  • Add the contents of the first bowl (half at a time) and mix. add vanilla. DO NOT OVER MIX!
  • bake for 25-30 minutes or until a toothpick comes out clean.
