Weight loss: ‘Low carb’ pumpkins can help you cut the calories this Halloween

There are many weight loss diet plans on the market but eating pumpkins could be enough to speed up results. Historically, carved pumpkins were used to ward off evil spirits, but you can use them this Halloween for their excellent health benefits. According to Health Line, pumpkins are a nutrient-dense food.

This means that although they are filled with nutrients, they are considerably low-calorie.

At approximately 94 percent water, one cup of pumpkin (245 grams) is less than 50 calories.

This means you can stock up on far more pumpkin than you could on other carb sources, such as rice, pasta or potatoes.

Using Google search data, Parkdean Resorts found that Snickers was the favourite Halloween sweet across the UK in 2020.

A typical Snickers bar, at 48 grams, boasts 280 calories.

This is a whopping 230 calories more than a cupful of pumpkin.

According to BBC Good Food, the pumpkin is a fruit rich in vitamins and minerals.

It is full of goodness – and devoid of typically ‘bad stuff’ like cholesterol, sodium and fats.

It is also a fantastic source of fibre, which helps curb your appetite.

While it’s fine (and encouraged) to devour a Halloween chocolate now and again, you can also opt for a healthy, pumpkin based dessert this holiday.

To make Bakerita’s Chocolate Chip Vegan Pumpkin Bread (Gluten Free + Refined Sugar free) you need:

Preheat oven to 350ºF. Grease an 8.5” x 4.5” loaf pan (you can also use a 9×5 pan) with coconut oil and/or line with parchment paper.

Combine pumpkin puree, almond milk, coconut sugar, nut butter, coconut oil, vanilla extract and flax meal, stirring to complete.

Add oat flour, almond flour, baking soda, baking powder, salt, and pumpkin pie spice. Stir until combined. Fold in chocolate chunks.

Pour into loaf pan and even out the top. Add chocolate chips on top and if desired, chopped pecans.

Bake for about an hour, or until a knife or toothpick inserted into the centre comes out clean. If your loaf looks like it’s getting too brown, tent with tin foil on top after 45 minutes. If you’re using a 9×5” pan, check on the pumpkin bread after 40 to 45 minutes.

Once done, let cool in the pan for 15 minutes and then remove from pan and place on a wire rack to cool completely before slicing.

Store leftovers tightly wrapped in plastic wrap, foil, or in a sealed container on the counter for up to three days, or store in the refrigerator for up to a week, or in the freezer for up to six months.

Versatility being one of its strong suits, the pumpkin can be served savoury too.
