Carmelize onion in bacon grease or butter. When done, stir inminced garlic, and cook until fragrant.
Cut sausage lengthwise in half, then cut those in half lengthwise again. Next cut them into 1/2-inch chunks. Place in crock pot. Pour carmelized onions over sausage.
After scrubbing potatoes, cut them into 1/2-inch dices, add to crock pot. Next add bouillon cubes and water.
Cover, and let cook on low 4 hours. Check to make sure potatoes are cooked through.
Stir in heavy cream, at least one cup. More may be needed.
