Pancake Day: Mary Berry shares ‘very simple’ recipe to make ‘delicious’ pancakes

Shrove Tuesday, or Pancake Day, falls tomorrow and the pressure is on to make the best batch of pancakes. In unearthed footage, Mary Berry explained how to make “delicious” scotch pancakes.

Pancakes can be made in lots of different ways, whether you prefer crêpes, American-style pancakes or scotch pancakes.

Appearing on BBC’s Classic Marry Berry in 2018, the chef shared a recipe for scotch pancakes, also known as drop scones.

She said: “Drop scones [are] sometimes called scotch pancakes and sometimes called griddle pancakes.

“I don’t mind what they’re called, they’re all the same thing and are absolutely delicious and very simple to make.”

Ingredients

175g self-raising flour

40g sugar

One teaspoon baking powder

One egg

200ml milk

Orange zest

Cooking oil

Mary revealed her “very simple” recipe to make pancakes in no time.

To follow the recipe, budding chefs need a large bowl, whisk and frying pan.

Method

The chef began by adding self-raising flour, sugar and baking powder to a large bowl.

She explained the ingredients do not need to be sieved for the recipe to work.

Next, use a whisk to create a well in the centre of the powder mixture and add one egg and 100ml of milk.

Using a whisk, Mary said to work the mixture round to gather in the flour.

Once the ingredients are combined, add orange zest and the remaining 100ml of milk.

After heating cooking oil in a pan, the mixture can be dropped in to create pancakes.

Mary said: “You drop the mixture in [the pan] in rounds and spread it a little.

“Wait until you see the bubbles then flick it over and then they will puff up.”

Once cooked, move the pancakes to a cooling rack where they can be covered with a clean towel until they are ready to serve.

Budding chefs can then choose their favourite toppings to serve.
