Mexican Cilantro Lime Chicken With Avocado Salsa

INGREDIENTS

  • 2lbsboneless skinless chicken breasts, cut into small pieces
  • 2tablespoons secolari cilantro olive oil
  • 12 cupfresh lime juice
  • 1small handful fresh cilantro, chopped
  • 1 12 teaspoons minced garlic
  • 1tablespoonhoney
  • 12 teaspoonsalt
  • Mexican-style corn
  • black beans, drained and rinsed
  • salsa or pico de gallo
  • chopped onion
  • roasted pepitas
  • fresh jalapeno
  • fresh avocado
  • cilantro

    DIRECTIONS

  • In a large bowl, combine chicken pieces, Secolari Cilantro Olive Oil, garlic, lime juice, honey, salt and cilantro and stir until well combined.
  • Allow chicken to marinate for at least 1 hour.
  • Season a stove top griddle or skillet with a smidge of olive oil.
  • Heat to medium-high heat and add chicken to hot pan, cooking on each side for 2-3 minutes, or until chicken is cooked all the way through.
