This may not quite be the real thing, but it is an excellent, keto-approved ice cream that’s super simple to make. Stevia is readily available, but any keto sweetener will do as long as it’s the same amount.
- 1/2 cup heavy cream
- 1 tablespoon almond butter
- 2 teaspoons cocoa, unsweetened
- 1/2 teaspoon stevia or other keto-approved sweetener
- 1/2 teaspoon vanilla extract
- 1 1/2 cups ice
- 1/4 cup half-and-half
How to Make It
Process cream, almond butter, cocoa, stevia, and vanilla in a blender until thickened, about 30 seconds.
Add ice and half-and-half; process until frothy, about 30 seconds. Serve immediately. (Or, for best results, freeze in blender 1 hour; process 10 seconds, and serve.)
