  • 12 onion (finely chopped)
  • 4 fresh red chilies (chopped)
  • 5garlic cloves (finely chopped)
  • 1 12 teaspoonstomato paste
  • 600gtomatoes (peeled and liquidised)
  • 1chicken stock cubes (crushed) or 1 vegetable stock cube (crushed)
  • 12 tablespoondried oregano
  • 12 teaspoondried basil
  • 12 teaspoondried parsley
  • 12 teaspoonpepper

    DIRECTIONS

  • Stir fry the onion in the olive oil until golden brown. Add the chillis and garlic and stir fry for a further minute.
  • Add the tomato paste and cook for a further minute.
  • Add the remaining ingredients, bring to the boil and simmer for 45 minutes stirring occasionally.
