French Onion One-Pot Pasta

How do you make French onion soup even better? By turning it into pasta, of course. Our French Onion One-Pot Pasta comes together in 45 minutes, but comes with comfort food vibes that’ll make it feel like it was on the stove all day. Plus, it won’t make a mess in your kitchen. Using fresh herbs and garlic will really kick the flavors up a notch, so don’t use shortcuts here. It’ll make a world of difference.


  • 3medium sweet onions (about 2 pounds), halved lengthwise and thinly sliced crosswis
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sherry or white wine
  • 1 tablespoon thyme leaves
  • 1 tablespoon chopped parsley
  • 2 cups water
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 12 ounces uncooked linguine, broken in half
  • 1 cup grated Parmesan cheese
  • 1 cup grated Gruyere or Swiss cheese
  • Garnish: thyme sprigs, chopped parsley

How to Make It

Step 1

Place a large skillet with flat sides over medium-high heat and add olive oil and butter. Stir in onions and cook for 15 minutes stirring occasionally.

Step 2

Stir in garlic, salt and pepper and cook additional 5 minutes or until onions have browned and are jam-like in texture. Stir in sherry and scrape bottom of skillet to remove any brown bits on the bottom.

Step 3

Stir in thyme leaves, parsley, water, beef broth and Worcestershire sauce. Add broken linguine and stir to incorporate pasta into liquid.

Step 4

Bring to a boil and boil for 10 minutes, stirring occasionally, until pasta is cooked and most liquid is absorbed. Remove from heat and cover for 3 minutes.

Step 5

Garnish with grated Parmesan, shredded Gruyere, thyme sprigs and chopped parsley.
