There’s just something so good about this simple, satisfying lunch. It’s cheesy, chewy, meaty, and indulgent enough to make kids and parents alike excited about lunchtime. They’re just as satisfying as the fried version, and they’re even good cold.
- 4 ounces Cheddar cheese, shredded (about 1 cup)
- 8(6-in.) flour tortillas
- 1 cup leftover chopped grilled or roasted chicken
- 2 tablespoons melted butter
How to Make It
Preheat oven to 375°F. Sprinkle 2 tablespoons cheese down the center of each tortilla. Top each with 2 tablespoons chicken, and roll tightly.
Brush each rolled tortilla with some of the melted butter, and place seam-side down on a rimmed baking sheet. Bake in preheated oven until golden and lightly toasted, about 12 minutes, turning half-way through.
