Clodagh McKenna: This Morning chef shared ‘biggest cooking tip’ – ‘quick and easy’

Finding the time to cook is just as bothersome as figuring out what to cook. Express.co.uk spoke to This Morning’s resident chef, Clodagh McKenna, about her brand new book and some helpful cooking tips.

The title ‘In Minutes’ is inspired by making speedy meals that can be cooked from start to finish in 10, 20 or 30 minutes. 

Clodagh said: “I thought what is it that viewers on This Morning or people on my Instagram are always asking and it’s always time-related.”

She spent three months in the beginning of this year creating all 80 recipes in this book.

Clodagh said: “Time is so important to us and I’ve definitely become known as a go-to Chef for quick and easy recipes.”

From Warm Lentil Salad with Goat’s Cheese to Spring Garden Gnocchi and Chicken Katsu Ramen. 

Originally, Clodagh was left with over 200 recipes and then whittled them down to the top recipes.

She said: “It’s definitely my best book so far.”

The author of eight successful cookbooks disclosed that the process behind producing ‘In Minutes’ was “definitely most challenging and most exciting”.

It’s divided into three chapters of 10-minute, 20-minute and 30-minute recipes. Each recipe also has “a swap in it” she says, “I was worried might not have a specific ingredient.”

Clodagh revealed what makes it “really easy to pull together dishes”.

She said: “My biggest cooking tip is to have a really well-stocked cupboard.”

And her guilty pleasure? “I love fries”. Fellow fries lovers can look forward to a 30-minute Fish & Chips recipe with tartar sauce.

Vegans and vegetarians have not been forgotten, and can also look forward to some tasty recipes. 

Clodagh said: “It’s important to look after everyone, so it’s a really good mix of meat, fish, vegan and vegetarian.”

There’s even something for gluten free and wheat free as she says “there a lot of options”.

Clodagh spent three years living in North Italy where she perfected “risottos and pastas and beautiful salads, hearty soups”.

Therefore, it comes as no surprise when asked what the easiest and quickest meal in the book is, Clodagh replies, “the Lemony Fetuccine Alfredo”.

What’s Clodagh’s favourite dish? Undoubtedly it’s her Risotto Milanese that she says, “looks like sunshine”.

This time around she delved more into other food cultures and learnt how to cook Korean, Vietnamese and Chinese food.
