Nigella Lawson has her own recipe for “thick, spongy American pancakes”, perfect with maple syrip or even bacon. The recipe was featured in her book How To Be a Domestic Goddess, published in 2000.

It calls for a blender, although you can make these pancakes by hand too.

The recipe creates enough for four to six people, so adjust appropriately.

American pancakes recipe

Ingredients

  • 2½ teaspoons baking powder
  • 1 pinch of salt
  • 1 teaspoon white sugar
  • 2 large eggs (beaten)
  • 30 grams butter (melted and cooled)
  • 300 millilitres milk
  • 225 grams plain flour
  • butter for frying

Method:

Nigella recommends putting all the indredients in blender and blitzing to make an easy batter.

However, if you don’t have a blender, you can create a batter.

To do this make a well in the mixture of flour, baking powder, salt and sugar.

Break the eggs into the well and eat them in, along with the melted butter and milk.

Heat a smooth griddle or pan on the stove, the method advises.

Tip the batter onto the hot pan to cook.

Nigella’s tip for cooking American pancakes is to flip them when you see the upperside of the pancake bubbling, and then cook for “one minute, if that” on the other side.
