Uncle Jake’s Bran Muffins

  • 4cupsall-bran cereal (Kellog’s All Bran or Western Family Fiber Active)
  • 1cupcanola oil
  • 2cupssugar
  • 4eggs, beaten
  • 5cupswhole wheat flour (can do all-purpose or a mixture of both, Jake does half and half)
  • 1teaspoonsalt
  • 5teaspoonsbaking soda (1 tablespoon = 3 teaspoons)
  • 1quartbuttermilk
  • 2cupsbran flakes

    DIRECTIONS

  • Mix the boiling water with the 4 cups of bran cereal, and allow the cereal to soak up the water.
  • Mix in the oil, sugar, eggs, flour, salt, baking soda, buttermilk.
  • Fold in the 2 cups of bran flakes.
  • Bake in greased or lined muffin tins at 400 for 15-20 minutes.
