Sugar-Free, No-Oil Whole Wheat Waffles

INGREDIENTS

  • 2cupswhite whole wheat flour
  • 2teaspoonsbaking powder
  • 12 teaspoonbaking soda
  • 12 teaspoonkosher salt
  • 1teaspooncinnamon
  • 12 teaspoonorange zest (optional)
  • 34 cup plain 2% Greek yogurt
  • 2eggs
  • 1cuplow-fat milk
  • 34 cupwater
  • 1tablespoonvanilla

    DIRECTIONS

  • In a large bowl combine the dry ingredients including zest if using; stir to mix.
  • In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
  • Pour the wet ingredients into the dry; stir until just combined. The batter will be a bit lumpy. Let sit 10 minutes. After the batter has rested, it will be thick but spreadable.
  • Meanwhile, prepare and preheat your waffle iron as needed.
  • Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
  • Top with pure maple syrup, fruit or whatever you fancy and enjoy!
