In a large bowl combine the dry ingredients including zest if using; stir to mix.
In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
Pour the wet ingredients into the dry; stir until just combined. The batter will be a bit lumpy. Let sit 10 minutes. After the batter has rested, it will be thick but spreadable.
Meanwhile, prepare and preheat your waffle iron as needed.
Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
Top with pure maple syrup, fruit or whatever you fancy and enjoy!
