INGREDIENTS

  • 12eggs
  • 1cupplain yogurt
  • 1teaspoonLawry’s Seasoned Salt (I left out)
  • 12 cupbutter (recipe called for 3/4 stick of butter, I used the whole thing)
  • 2cupsshredded hash brown potatoes
  • 14 cup chopped onion (I used more onion)
  • 1cup grated sharp cheddar cheese (I used more cheese)

    DIRECTIONS

  • Preheat oven to 350.
  • Grease a 2 quart casserole dish with cooking oil.
  • Beat eggs, yogurt, and salt together.
  • Melt butter and lightly saute onion.Add thawed potatoes and stir to mix.
  • Pour in egg mixture and lightly stir to blend ingredients.
  • Pour into casserole dish.Sprinkle grated cheese over casserole.
  • Bake at 350 for approximately 25 minutes or until knife comes out clean when inserted.
  • Cut into 8 squares.
